Brio Bakery is the hot new bakery to come to the Oliver Exchange Building. I’ve been guilty of going to Brio Bakery a number of times now. They specialize in breads and Viennoiserie. It’s often packed on weekends and if you’re eyeing a particular pastry, it’s better to get there early to make sure you get what you want.

Parking is a bit scarce in the area, but there’s always tons of street parking in the adjacent streets if you’re willing to walk a little bit. I’ve been on a couple of weekends and weekdays and their pastry line-up does change everyday, so if you’re looking for a particular pastry, it’s best to call ahead or even ask which days they may be planning on making it.

So far, I’ve had the chance to eat the pain au chocolate, rosemary gam and cheese croissant, regular croissant, pistachio chocolate croissant (MY FAVE), chocolate cruffin, cinnamon cruffin, lemon blackberry cruffin, the list goes on… I’ve been here probably too many times, and sometimes dig in before managing to get a photo.

Each of their pastries is flakey, buttery, and delicious. By far my favourite has been the Chocolate Pistachio Croissant. I’ve come several times since having it, hoping to get it again, but either they are sold out, or not being made that day. (I’m told they seem to only make it but Saturday, but unsure).
Definitely check them out if you’re in the neighbourhood! You won’t be disappointed.
